Lagostina non-stick cookware has been specifically designed so the food does not stick. However, the saucepans and pans require adequate maintenance. To this end, you should consider the following suggestions: slightly grease the pan or saucepan before the first use, then wash them and dry them; repeat the procedure every time, even when you start washing them regularly in the dishwasher. It is also important to avoid overheating them excessively or scratching them, especially by using metal utensils (spatulas, ladles) or abrasive sponges.
a. First use: wash the pan with hot water and liquid detergent to remove any trace of dust. Dry it and grease the non-stick coating with a little cooking oil before using it for the first time. Remove excess oil.
b. Wash and dry the cookware after each use.
c. Use most metal utensils with caution; avoid using knives and whisks.
d. Avoid cutting directly in the pan.
e. Avoid perforating the non-stick surface. Surface scratches or abrasions are wholly normal and do not alter the cookware's performance.
f. After use, ensure the contents of the pan do not stick and avoid using empty pans on a heat source.
g. Always select the right size hob or adjust the flame so it only touches the bottom of the pan and does not rise to the sides.
h. Never leave pans unattended while cooking.
i. Let the pans cool before washing them.
The non-stick properties of the ceramic coating are more limited than the classic Lagostina non-stick coating (PTFE) when it comes to durability and overall lifespan of the non-stick coating. To prevent damaging the surfaces of your ceramic nonstick pans, always cook on a low or low-medium heat. Damage to the non-stick coating will cause food to start sticking to the pan and more likely to stain. Therefore to get the most lifespan out of your ceramic coated cookware, low to medium heat settings are recommended. For caked food, we recommend soaking the pan in water and soap, possibly with a little white vinegar. Over time, the ceramic coating interior will stain and the marks will be impossible to remove. This does not affect the cookware's performance and poses no risk to health. After every 10 cycles, it is recommended to “re-season” your ceramic nonstick cookware to prevent the ceramic surface from drying out. To “re-season” the pan, use a paper towel to wipe the inside surface with a small amount of cooking oil, then wipe off.
Yes, in the oven, the temperature must not exceed 175 °C / 350°F, because the Bakelite handles are not able to withstand higher temperatures.

Lagostina cookware with plastic handles or hand-grips are not suited for oven use. In case of silicone handles the temperature must not exceed 210°C/410°F.

No. Cooking at high temperatures does not shorten cooking times nor contributes in any way to food quality, therefore we strongly recommend cooking at medium temperature. Furthermore, using excessively high temperatures may damage the non-stick coating and burn your aliments.
Lagostina cookware allows you to choose whether to cook with or without fat, based on your personal preferences.

Yes. Cooking at excessively high temperature may burn food, causing stains and deforming the pan. Furthermore, excessive overheating may affect its non-stick properties. A medium temperature is more than enough to cook, because aluminium is a very good heat conductor. Lagostina cookware may be used up to 260 °C without suffering any damage, i.e. well beyond the temperature required to cook or fry. Using the cookware in normal cooking conditions therefore does not entail any risks or problems. The pans might only be damaged if they are heated at very high temperatures when empty.
We typically recommend using wooden or nylon utensils maintain the overall beauty of your cookware over time. Metal utensils are safe to use on our stainless steel cookware. Note that it is possible to get scratches on stainless steel with the use of metal utensils, but it not affect the performance of the cookware. To maintain the beauty of the stainless steel interior, we recommend using nylon or wooden utensils. Do not use metal utensils on non-stick cookware as this will scratch the non-stick surface. Scratches in the non-stick coating exposes food to contact with the underlying metal and the food will start to stick to the metal. Do not use whisks, knives, and other utensils with sharp edges to cut, chop or whip foods on the cooking surface. Such use can damage the cooking surface and void your lifetime warranty.
The cookware must NEVER be placed in the microwave oven.
Just wash it by hand with soap and water. The pan must be washed after each use to remove the layers of fat that might form on the surface. If it is only rubbed with kitchen tissue or rinsed under running water, the film might not be completely removed, with the risk of burning the next time it is used, causing stains. Non-stick pans must not be cleaned with sponges or abrasive powders. A synthetic sponge is ideal to clean both the inside and the outside.
They can be easily removed with a nylon sponge.
For more stubborn stains, boil one tablespoon of bleach in a quarter litre of water for 15-20 minutes. Clean, rinse and dry the pan, then grease it with a little oil.
Most Lagostina cookware can be washed in the dishwasher. However, it is recommended that some ranges with copper finish, ceramic exteriors and or interiors be hand washed to prolong the life and appearance. Dishwasher detergent may dull the cookware's outer coating over time, without affecting its non-stick properties or other performance features. The ceramic coating is based on a gelatinous solution with inorganic particles in suspension which allow, once the deposition process on the product is completed, to obtain extremely compact films and with extremely dense patterns, such as to enable an extremely decorative aesthetic appearance and very good performance in case of any thermal shock, resistance to chemical detergents and mechanical resistance to abrasion, thanks to the high hardness and compactness of the resulting surface.

The absence of PTFE and PFOA, lead and cadmium in the water-based solution together with relatively low temperature used to finalize the treatment, gives this coating a lower environmental impact solution compared to all other coating types. The ceramic coating provides high resistance to scratches and abrasions, allows healthy cooking with crispy and brown food, without high temperature awareness. It is therefore extremely useful to fry, brown or sauté. The extremely smooth surfaces ensure an easy cleaning, low risk of food burning or sticking and optimal resistance to wear.

To preserve the non-stick properties of the product:
- avoid heating it excessively when empty;
- never overheat while cooking fat and oil;
- slight scratches and abrasions that might appear with use do not change the coating's non-stick performance;
- to preserve and avoid scratching the coating, we recommend using tools made of nylon, silicone or wood.

In case of burned food, fill the pot with warm water and clean it after a few hours. To restore the non-stick properties of the product, rub the coating with a cotton pad soaked with oil.
The PTFE coating of Lagostina products is free from PFOA (perfluorooctanoic acid), lead and cadmium. PTFE is an inert substance that has no chemical reactions with food, water or detergents; it is completely harmless, even in the event it is ingested, and its particles are non toxic. At Lagostina we always play it safe!
A scratched pan is not dangerous, however we recommend replacing scratched pans as the detachment of the non-stick coating exposes food to contact with the metal underneath and food tends to stick. NO. Lagostina cookware with non-stick coating does not contain PFOA. Regular checks are carried out by independent laboratories that ensure there is no PFOA in finished products. Since 2003, tests have been carried out on a regular basis by independent laboratories of various countries (INERIS in France, ASAHI GLASS FLUOROPOLYMERS in the United Kingdom, FABES Labs in Germany, MB Labs in Canada and SGS in China). These tests have systematically proved the absence of PFOA in Lagostina products with non-stick coating.
There is currently much confusion regarding non-stick coatings, especially concerning PFOA. Lagostina non-stick coatings are made in PTFE, the abbreviation of the scientific name polytetrafluoroethylene. This material has been acknowledged as innocuous by the European and US public health authorities. PFOA and PTFE are two completely different elements. In short, Lagostina cookware with non-stick coating is produced in PTFE and contains no PFOA.

The non-stick coatings and enamels of our Lagostina cookware do not contain either lead or cadmium. These harmful substances are released by the product when it is washed in the dishwasher and stick to the other items in the dishwasher. Cadmium and lead - substances are not expelled by the body when ingested. This is the reason why for more than 20 years, all our cookware are manufactured without using lead or cadmium.

Stainless steel handles are sturdy and oven safe. Made of thick stainless steel they conduct heat very slowly. However, side handles can get hot faster than long handles as they are close to the pan's body. Therefore, always make sure the element you're cooking on does not exceed the size of the pot. The time spent over the heat source and the temperature setting also determines how long the handles will remain cool to the touch. Stainless steel handles attached to lids will heat up faster than side handles. For oven use, all handles will definitely get hot. It is recommended to use oven gloves when handling hot handles to avoid burning your hands.
The quickest way to check whether your cookware is suitable to be used on induction hot plates is to perform the magnet test on the pan. It is extremely simple: if a magnet sticks to the bottom of the pan, it is going to work on an induction hot plate!
Yes, your Artiste-Clad Hammered Copper cookware will naturally darken or tarnish over time. Based on your preference, you may choose to either maintain the patina or restore the shine on your pan's exterior. Neither will affect your pan's performance.

To clean and restore the pan's shiny appearance, use the Lagostina Stainless Steel nd Copper Cleaner. Apply with a clean, wet cloth or sponge, rubbing in a circular motion. Then, rinse in warm water, and dry thoroughly with a clean, soft cloth.

To clean and maintain the patina, wash the pan in warm, soapy water with a soft cloth or sponge. Then, rinse in warm water, and dry thoroughly with a clean, soft cloth.

DO NOT use a powder cleanser, bleach, oven cleaners, steel wool, steel scouring pads, nylon pads, harsh detergents or detergents containing chlorine bleach to clean your pan's exterior. Because copper is a soft metal, these could damage the pan's appearance.

Lagostina flatware is 18/10 stainless steel. This composition of chromium and nickel has been established to be the best quality to provide high polish finish and resistance to rust and stains.
Some foods that are high in acidity (such as citrus fruits, juices, tomatoes, etc.) should not be cooked until the cookware is highly seasoned. The high acidity of these foods can remove the seasoning and can result in discolouration of the cookware and food that can have a metallic taste. Do not cook these types of foods until the cast iron is better seasoned.
If food eventually begins to stick to the interior surface of your pre-seasoned cookware or if rust appears, re-seasoning is required. Please follow these instructions.

a) Clean the pan thoroughly in hot, soapy water, then dry thoroughly.
b) Apply a thin, even coating of melted solid vegetable shortening (or cooking oil of your choice, such as linseed or canola oil) onto both the interior and the exterior surfaces of the pan.
c) Place the pan on a baking sheet lined with aluminum foil and place in the oven at 149°C or 300°F.
d) Remove the baking sheet from the oven after 15 minutes and discard excess grease. Return pan to the oven for one hour.
e) Let the pan cool completely before removing from the oven. Do not wash and store in a dry place, on paper towels to absorb moisture and prevent rust.
Yes, however we recommend hand washing. To maintain your flatware in good condition, always keep it clean, dry and away from silver.
