  • 3/4-pound spicy Italian sausage, casings removed
  • 2 shallots, diced
  • 2 carrots, peeled and cut into 1/3-inch pieces
  • 1 celery stalk, cut into 1/3-inch pieces
  • 1 clove of garlic, peeled and smashed
  • 1/4 teaspoon red pepper flakes
  • 1 1/2 teaspoons kosher salt
  • 4 cups low sodium chicken broth
  • 2 cups water
  • 1 bay leaf
  • 1 (3inch) piece of parmesan rind
  • 1 small head escarole, chopped into 2-inch pieces
  • 1/2-pound fresh cheese tortellini, tricolored if available
  • Freshly grated Parmesan cheese to finish
